I haven't been able to update lately because of a serious corneal ulcer, mainly due to stress and allergies. Ill update more on that another day. Just the thought of it still haunts me. Anyways I was meaning to post this blog early August, but with the turn of events...I couldn't. I feel okay now, to say the least, but the ophthalmologist still says otherwise.

Anyways, I was cleaning my closet when I found my Hermes scarf, wrapped neatly in a box, on top of my highest shelf. It's a beautiful, navy blue, silk scarf that feels like butter to the touch. My Grandma gave it to me a few years before she passed away and I always knew it was something that I'd love and cherish forever. She was my idol; I loved everything about her. I use to watch her sit by the window as she sewed for hours. In a sense, I firmly believe I got into fashion because of her. After she passed, the only thing I wanted was her box of pins and needles. Not only does it remind me of my childhood, but it reminds me of the work she put into all of her pieces. She did what she loved; that's my true inspiration.

It was sunny outside so I felt the need to throw on a hat and tube top. It was the perfect weather for rollerblading by the beach; it's a shame I'm not close to one right now. On the bright side, I got my iPad from the Apple store. Awhile back, Jay asked me if I could get him the new iPhone4 in exchange for an iPad. I agreed quickly and made sure he kept his promise. (Poor guy didn't realize the price difference til a little down the conversation haha) Anyways, I had to wait til we got out to the parking lot to do my happy dance. I didn't want to look like an Apple newb in the store. Jay couldn't stop smiling either; i think it was my fault mainly because I looked so giddy the rest of the day. I officially caved and joined the Apple club. Yay for conforming to modern technology...I feel sick to my stomach.

Leighton Meester

I never watched Gossip Girl, so I was suprised to find out she stars in it. I hear this song every day at work and I love it. I finally looked her up and shes gorgeous. I love her style!

Her face is innocent and her style is risque: Perfect balance. Besides, who wouldn't love a girl in Louboutins?

Red Velvet Cupcakes - one of my favorite recipes.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar
  • Chopped pecans and fresh raspberries or strawberries, for garnish

Directions

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.

In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

For the Cream Cheese Frosting:

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Garnish with chopped pecans and a fresh raspberry or strawberry.
